Ingredients

  • 1/2 Cup Unsalted butter (room temperature)
  • 3/4 Cup Light brown sugar
  • 1 Large egg
  • 1 Teaspoon Vanilla
  • 1 Cup All-purpose flour (I used King Arthur All-Purpose flour)
  • 1 Cup Graham cracker crumbs
  • 1/2 Teaspoon  Baking powder
  • 1/4 Teaspoon Salt
  • 1 Cup Semi-sweet chocolate chips
  • 1 Heaping Cup Marshmallow Creme

Equipment

  • Food processor or Blender
  • 8-inch or 9-inch Baking Pan
  • Mixing Bowls
  • Measuring Cups and Spoons
  • Spatula or Wooden Spoon
  • Sharp Knife
  • Oven Mitts
  • Cooking Spray

Method

  1. Preheat oven to 350°F.
  2. Grease an 8-in or 9-in Square baking pan on all sides.
  3. In a large bowl, cream together the butter and brown sugar until smooth.
  4. Add the egg and vanilla extract and mix until combined.
  5. Blend or use the Food processor to grind the Graham crackers up into crumbs.
  6. In a separate bowl, whisk together the flour, graham cracker crumbs, baking powder, and salt.
  7. Pour the flour mixture into the large bowl and beat on medium speed until combined.
  8. Spread 2/3 of the dough into the bottom of the pan.
  9. Then spread the marshmallow cream on top.
  10. Evenly sprinkle the chocolate chips on top of the cream.
  11. Form the remaining dough into 8 to 10 round balls and then flatten. Layer the flattened dough in intervals on top of the chocolate chips, leaving some of the marshmallow/chocolate chips area exposed.
  12. Bake for 25 to 30 minutes, until the top is lightly browned.
  13. Remove from the oven and allow the bars to cool.
  14. Once cooled, cut into squares. Enjoy!

Notes

Recipe Variations
Add Nuts: For a crunchy contrast, sprinkle chopped toasted pecans or almonds into the chocolate layer before adding marshmallows.
Peanut Butter Swirl: Incorporate swirls of peanut butter into the chocolate layer for a rich, nutty variation that pairs wonderfully with marshmallow sweetness.
Salted Caramel Drizzle: Drizzle store-bought or homemade salted caramel over the baked bars for an extra layer of indulgence that complements the chocolate and graham base.
Use Flavored Marshmallows: Try vanilla bean or toasted coconut marshmallows for a unique, flavorful twist on the classic bar.
Make it Vegan: Use dairy-free butter, vegan chocolate chips, and marshmallows made without gelatin to create a plant-based version.
